Elena repasa la composición de la miel cruda, rica en azúcares naturales pero también en enzimas, aminoácidos, polifenoles, minerales, vitaminas y otros compuestos bioactivos. Frente a ella, la miel pasteurizada se somete a calentamiento para prolongar su estado líquido, reducir microorganismos y facilitar su conservación comercial, un proceso que puede disminuir la presencia o actividad de algunos de sus componentes sensibles al calor. A lo largo del programa se comentan distintos estudios sobre las posibles propiedades de la miel y su relación con la salud. Entre los asuntos abordados se encuentran sus efectos antioxidantes y antimicrobianos, su utilización tradicional para aliviar la tos y la irritación de garganta, su posible influencia sobre determinados marcadores metabólicos y su empleo tópico en algunos tipos de heridas. También se analiza el papel que podría desempeñar la miel cruda en la digestión y la microbiota intestinal, así como las investigaciones realizadas sobre alergias estacionales, infecciones respiratorias, colesterol, metabolismo de la glucosa, estrés oxidativo y salud cerebral. Elena explica además por qué una pequeña cantidad de miel antes de acostarse podría favorecer el descanso a través de mecanismos relacionados con el glucógeno, la insulina, el triptófano, la serotonina y la melatonina. El programa recuerda que la miel sigue siendo una fuente importante de azúcares y que algunas de las investigaciones mencionadas son estudios pequeños, experimentales o realizados en animales, por lo que sus resultados no deben interpretarse como sustitutos de un tratamiento médico. Se presta especial atención a las personas con diabetes y se recuerda que la miel no debe administrarse a menores de un año. Una entrega dedicada a conocer qué contiene realmente la miel cruda, qué cambia cuando se pasteuriza y qué respaldo científico existe detrás de las numerosas propiedades saludables que tradicionalmente se atribuyen a uno de los alimentos más antiguos utilizados por el ser humano.
