En un felicísimo tiempo en que las pijas ilustres sabían más de fundar conventos que de inversiones en activos inmobiliarios, Francisca de Puigforfilla y Fuster puso a funcionar todos sus contactos y su talento como estratega de las infraestructuras para fundar el convento de concepcionistas franciscanas de Sineu, Mallorca, desde el que hoy os hablamos. Aposentadas nada menos que en su refectorio, arropadas por el rebañito mallorquín y convertidas en inusitadas arqueólogas, nos disponemos a echar mano de un abanico de fuentes y resquicios que nos permitan reconstruir la complicada proxemia que entraña todo refectorio. Acompañadnos, amigas, en un recorrido comparativo, goloso y liminar por el heterogéneo refectorio conventual de nuestros siglos más favoritos de la historia: del espacio simbólico de alimentación, aprendizaje y comunión al dispositivo panóptico de vigilancia y castigo (donde la monja que sembrara discordias debía sostener un palo en la boca); de la cultura monástica de lo cocido a la eremítica de lo crudo; del hornito codiciado por Santa Teresa al refectorio exageradamente topofílico de la Santa Juana; y de las batallas campales de Santa Catalina Tomás contra EL TENTADOR en su refectorio mallorquín a la fundación mexicana de las capuchinas del convento de la Purísima Concepción de Toledo, para acabar descubriendo qué sucede cuando el asidero terapéutico y gastronómico que nos ancla al sosiego de lo conocido se ve alterado por los sobresaltos culinarios del viaje.
